Hogy Fine Cooking: Blackened Grouper

 

This great way of preparing fishing is super simple, very quick and delicious. Just about any fresh fish can be substituted in this recipe.

Difficulty: Easy     Prep: 5 Min     Cooking Time: 12 Min

Ingredients:

Boneless and Skinless fish filets ( cut into 8oz portions and less than 1inch thick for even cooking)

Blackening seasoning ( try to find one with out salt, or very little )

Butter or Oil

 

Directions:

Heat pan to medium – high heat

Evenly coat filets in blackening seasoning. A moderate dusting will suffice. If you can find low or no sodium seasoning, you won’t run the risk of over salting the fish.

Add a pat of butt or tablespoon of oil to pan.

Carefully lay filets in pan, maintain at a medium high heat. Cover.

Cook each side for 4 – 5 minutes, check for doneness by sticking fork in between flakes in thickest or center of filet. Cook for another two minutes if not fully cooked.

When flakes just begin to separate all the way through, remove from heat.

 

Serving suggestions:

Serve with you favorite rice dish and black beans

Garnish with fresh limes, diced avocados and corn tortillas

Top with red chilies for extra heat
